About the Role
Pacific Bistro seeks a Sous Chef for our 4-star San Diego hotel restaurant. Lead kitchen operations during dinner service, develop seasonal menus, and maintain AAA Diamond standards. Culinary creativity and cost control focus required.
Responsibilities
- Supervise 15-person kitchen staff
- Manage food costs (<28%)
- Develop weekly specials menu
- Ensure HACCP compliance
- Conduct inventory ordering
- Train new cooks on plating standards
- Collaborate with pastry team
Requirements
- Culinary degree or equivalent experience
- 3+ years upscale dining experience
- ServSafe Manager certification
- Knowledge of California cuisine trends
- Butchering/fish fabrication skills
- Ability to work 2 PM – midnight
- Experience with COGS reporting
